So they basically use extra parts of the crab that requires a lot more processing for only a little bit of meat. You paid for the extra work that went it in more than you got scammed imo. Some may say it's too expensive but it's like a super complex collage of art pieces and an expert culinary flavour experience all at once and it's quite unique and it's made to near perfection so id assume thats honestly a great deal. That's a lot of unique dishes for freshly made. They probably have a daily menu they randomly change up when a few new pieces are made.
